600Want to make your pasta and stir-fried healthier? Just reverse the ratios, packing in more vegetables and sauce, using noodles and grain-based foods as a garnish. This version uses bok choy and chives in a fermented black bean sauce with just a few chow fun noodles.

Here's another recipe in my quest to take the cute and cuddly animals out of all of my favorite foods in a no-BS, as-delicious-as-the-real-thing, good-enough-for-anyone kind of way. I'm particularly happy with this one, which makes sense, as it's a logical extension of my vegan mapo tofu recipe. I'm talking about the other great pillar of cheap-and-easy Sichuan cuisine: dan dan noodles.

The second great thing about making dan dan noodles—it's an exceedingly simple dish to make. Once you've put together your roasted chile vinaigrette (which holds for months in the fridge, by the way), it's just a matter of cooking your noodles, frying your chopped pork, and throwing everything together.

While the most traditional versions don't include a sesame product, I've recently taken to adding a touch of tahini to my sauce, after having tasted it in Chichi's vermicelli with chili oil recipe. Not enough to bring a distinct sesame flavor to the dish, but just enough to lightly bind the sauce and add a touch of creaminess to help it cling to the noodles a little bit better.

It's not as popular with the U.S. audience as it is with the British (yet), but it seems that as palates are shifting and folks are becoming more and more accustomed to spicier foods, jalfrezi is getting primed to win over this side of the pond as well. With its origins in China, jalfrezi is more similar in its cooking method to dry-fried Chinese dishes rather than the typical wet Indian curry. This one incorporates chickpeas, potatoes and spinach, and a simple chutney of cilantro, garlic, chile, and lime juice finishes it off.

"A lot of people like sparkling wines with really robust, spicy food because it is clean and the bubbles accentuate the dish's spice. On the other hand, if the food is really spicy, I love wines that help to tame the fire and have relatively low alcohol (chances are, I'll be drinking a lot of it very quickly!); my favorites are classic Mosel kabinett or spätlese rieslings. For sweeter dishes, especially ones that showcase crispy duck or pork, I'm a huge fan of cru Beaujolais. For either category, try to find wines from classic vintages and quality-minded producers. The more specific the site, the better; if the most you know of the wines provenance is "Mosel", it might be a good opportunity to dig deeper to find one with a town and vineyard designation. Perhaps the biggest key to making excellent dan dan noodles is to make your own roasted chile oil. When done right, it gets a rich, fruity, smoky flavor that none of the store-bought stuff can touch. It's really quite simple. Toasted Sichuan peppercorns have a sweet, citrus-like aroma with a mouth-numbing quality, while roasted chile oil brings on the heat.

Juicy, garlicky broccoli rabe braised in a dry white wine provide moisture and texture; roasted peppers add a bit of fruity tartness and smoky depth; marinated artichoke hearts are herbal and funky; and sun-dried tomatoes have that dried fruit thing going. Stick'em together, and—hey!—you got something that works just as well as the original muffuletta and for all the same reasons, while simultaneously being brand new.

Preserved mustard root like this (often labeled "Sichuan Preserved Vegetable") can be found in cans or jars in your Chinese market. Once opened, they'll last for months in a sealed container in the fridge. You don't need much to add big flavor to dishes.

Done right, takeout fried rice is a thing of satisfying, well-balanced beauty. But it's frequently served clumpy and over-sauced, or, worse, bland and oily. Making it at home gives you more control over the final dish, plus it's a great way to use up leftovers. Our approach busts a few myths—no, your rice doesn't have to be medium-grain, or day-old, for that matter. While this version calls for vegetables, like carrots and peas, you can easily bulk it up with pork , kimchi and Spam , Thai-style crab , chicken, or your protein and garnishes of choice.

Transfer noodles to serving bowl and top with pork mixture. Stir vinaigrette and spoon over and around the noodles (you may not want to use all of it). Sprinkle with roasted peanuts, Sichuan peppercorn, grated garlic, and scallion greens. Serve immediately.
