Recipes abound for General Tso's chicken, one of the most iconic dishes in the takeout canon. All of them, however, seem to consist of chicken fried in a crispy shell, then tossed in a sweet, glossy sauce flavored with garlic, ginger, dried chilies, soy sauce, and sesame oil, among other ingredients. Our biggest complaint about the formula is that overly sugary sauce, which we balance in this recipe with a good amount of vinegar. A couple of tablespoons of vodka and a little marinade added to the batter result in a supremely crunchy, well-textured coating.

If it is a dark sauce, like the plum sauces or soy based, these are high in sodium, so a wine that is high in fruit focus is best. 600Fish sauce adds saltiness and umami depth, and dried red chiles add spice to these garlicky, crowd-pleasing grilled chicken wings. Plan ahead—they need to marinate for 12 hours before hitting the hot grill.

Smoked low and slow on the grill, this chicken marinated with Scotch bonnet peppers puréed with other fresh aromatics and spices tastes incredible. It's an 11 1/2-hour process (about 10 of those hours are hands-off while the chicken marinates), but the flavor is beyond worth the effort.

Anyone who's spent a significant amount of time in or around New York City should be intimately familiar with scallion pancakes, the flaky, savory disks studded with chopped scallions and fried. We use a laminated dough here (much as you would if making puff pastry) to create layer upon layer of very thin sheets of flavorful pastry. Frying them in oil is traditional; for a puffier, crispier experience, try cooking them on the grill .

"Riesling with some fruitiness and a bit of age pairs nicely with heavy and complexly spiced Chinese sauces. Riesling from older vintages can be hard to come by at an everyday wine store, but they do make appearances from time to time. Stock up when you see a nice Riesling with age and save it for a rainy Chinese takeout day! I did this with a Riesling Spatlese from Mosel, Germany 1997 for less than $20 that I found at my neighborhood wine store and enjoyed it with a few savory, dark-sauced Chinese dishes—the flavors balanced each other perfectly. Additional choices from the other side of the Rhine River are Alsatian Pinot Gris, Muscat, Riesling and Gewurztraminer—these all contain a lot of complex spice notes, and occasionally a touch of residual sugar, which allow them to work with Chinese food."— Caleb Ganzer, Eleven Madison Park (NYC)

As former Serious Eats editor Adam Kuban put it, crab rangoons, those little parcels of creamy filling surrounded by crunchy shell, are "just a big ol' excuse for crazy non-Chinese people to eat deep-fried cream cheese." And it's true—but that admission doesn't make them any less delicious. At your local Chinese-American joint, the crab rangoons are almost certainly made with surimi, those artificially colored sticks of reconstituted fish that you find in California rolls. Using real crab instead will give the dumplings a more assertive fish flavor; stick with surimi if you'd like to re-create the "crab" puffs of your youth.

Our kung pao fish takes its cues from the intense Sichuan version of the stir-fry, not the mild American-style takeout dish. That means lots of mouth-numbing Sichuan peppercorns and funky doubanjiang, or chile-bean sauce, plus garlic, scallions, and peanuts. Go with a firm white fish, like catfish or tilapia for this recipe.

This recipe is a true hybrid. It starts with a traditional French mirepoix base of onions, carrots, and celery cooked down in extra virgin olive oil, but then gets a bare hint of flavors with a curry bent—ginger, garlic, hot chili, a touch of coriander and cumin and a jar of coconut milk. An unconventional gremolata topping turns a run-of-the-mill wacky lentil soup into something downright fancy tasting.

This Chinese-Peruvian dish combines ingredients from both cuisines with the deep, smoky flavor provided by stir-frying. Tender slices of beef are cooked over a high flame along with red onion, tomato, and a sauce of ginger, garlic, and soy sauce; allowing the contents of the wok to briefly catch fire (if you're daring enough!) will bring even more of that smoky wok hei flavor to your food. Serve the stir-fry with a mound of rice and a pile of crisp French fries .

Cumin lamb falls into a wholly different category, however. Given that it's slightly rich, has that wonderful cumin spice yet remains quasi-delicate on the palate, there are countless great pairings for this dish. Anything from S. Favorites of mine include the Cab Francs from Baudry (A bargain!), Montevertine "Pian de Ciampolo" from Tuscany, older Bordeaux (mostly left bank or Pomerol) and also the wines of Leon Barral.
