"A lot of people like sparkling wines with really robust, spicy food because it is clean and the bubbles accentuate the dish's spice. On the other hand, if the food is really spicy, I love wines that help to tame the fire and have relatively low alcohol (chances are, I'll be drinking a lot of it very quickly!); my favorites are classic Mosel kabinett or spätlese rieslings. For sweeter dishes, especially ones that showcase crispy duck or pork, I'm a huge fan of cru Beaujolais. For either category, try to find wines from classic vintages and quality-minded producers. The more specific the site, the better; if the most you know of the wines provenance is "Mosel", it might be a good opportunity to dig deeper to find one with a town and vineyard designation. The second great thing about making dan dan noodles—it's an exceedingly simple dish to make. Once you've put together your roasted chile vinaigrette (which holds for months in the fridge, by the way), it's just a matter of cooking your noodles, frying your chopped pork, and throwing everything together.

Preserved mustard root like this (often labeled "Sichuan Preserved Vegetable") can be found in cans or jars in your Chinese market. Once opened, they'll last for months in a sealed container in the fridge. You don't need much to add big flavor to dishes.

This Chinese-Peruvian dish combines ingredients from both cuisines with the deep, smoky flavor provided by stir-frying. Tender slices of beef are cooked over a high flame along with red onion, tomato, and a sauce of ginger, garlic, and soy sauce; allowing the contents of the wok to briefly catch fire (if you're daring enough!) will bring even more of that smoky wok hei flavor to your food. Serve the stir-fry with a mound of rice and a pile of crisp French fries .

We keep the dish from getting cloying (as it sometimes can be) by balancing the sweetness of the sauce with dried red chiles and acidic rice vinegar. Spiking the fry batter with vodka gives the chicken a shatteringly crisp crust.

Turkish hot pepper paste, found in Turkish markets or online, adds heat to an emulsified sauce made with tomato, anchovy filets, egg, capers, tuna, Dijon, and oil. Pour it over the freshest in-season tomatoes you can get your hands on and garnish with basil leaves for a cool. spicy, summery salad.

"When pairing with Chinese food, you're looking for wines that are spicy, soft, and on the richer side. Chinese food is a generous cuisine, bringing expressive and muscular wines is important. For Mapo tofu, you're looking for spice and energy to match the dish. Red wines from the Douro in Portugal would play well with this dish. Mushu pork has a crunchy and fresh tone. Cabernet Francs from the Loire Valley, Cote de Beaune Reds, and Austrian Blaufrankisch would be a good fit, offering bright fruit and a fresh nature. Peking duck needs some richness and sweetness. Try rich and bold California Cabernets or Grenaches from the Languedoc Roussillon. The most famous ding in America is almost certainly kung pao chicken—you'll find it on pretty much any Chinese takeout menu in the country. Our version is made with bell peppers, celery, peanuts, and a mild sauce thickened with cornstarch. We use thigh meat for the diced chicken, which stands up to the heat of the wok better than white meat.

If you've eaten a typical dish of takeout orange chicken any time recently, you might recall an orange-tinted sauce with very little resembling fruit flavor. Here, we create better, more complex flavor in our orange sauce by incorporating citrus three ways: fresh orange juice, grated zest, and dried peel. That last ingredient adds a depth that you can't get from fresh juice and zest alone.

"The one wine in the world that tastes good with most Asian food: German Riesling. If you have spice, there’s no better foil than a little bit of sugar. (I try to match the sugar with the spice—if you like it 4-star, get thee to an Auslese. The rest of us reasonable 2 star people will enjoy our Kabinett and Spatlese.) If you have sweeter dishes, try to get a Riesling that is just a tad sweeter than the dish in question. Even if the preparations are a bit simpler, there is often a salt component enhancing flavors. Generally stated, sweeter wines will cancel out the perception of salt without negating its positive effect on a dish. Consequently, the salt will also diminish the perception of sweetness in the wine, making everything just plain taste better.
