"The one wine in the world that tastes good with most Asian food: German Riesling. If you have spice, there’s no better foil than a little bit of sugar. (I try to match the sugar with the spice—if you like it 4-star, get thee to an Auslese. The rest of us reasonable 2 star people will enjoy our Kabinett and Spatlese.) If you have sweeter dishes, try to get a Riesling that is just a tad sweeter than the dish in question. Even if the preparations are a bit simpler, there is often a salt component enhancing flavors. Generally stated, sweeter wines will cancel out the perception of salt without negating its positive effect on a dish. Consequently, the salt will also diminish the perception of sweetness in the wine, making everything just plain taste better. And if someone at the table says something snarky about sweet Rieslings, just flip it and order a Prosecco or slightly sweet Vouvray or Gewürztraminer—anything on the 'helpful side of dry'."— Chris Horn, Purple Cafe (Bellevue/Seattle)

"It’s important to consider your main flavor and texture when pairing wine with Chinese food. If it is a dark sauce, like the plum sauces or soy based, these are high in sodium, so a wine that is high in fruit focus is best. Wines like Dolcetto, Barbera, Blaufrankisch for reds and Riesling, Sylvaner, Cortese, Prosecco and Champagne in general work best."— Molly Wismeier, Restaurant R’evolution (New Orleans)

The pork is the odd man out in the traditional recipe. Fortunately, much like with the beef in Sichuan mapo tofu, the pork is not the star player of the dish. Its role is mainly textural, adding a bit of meaty, bouncy chew that clings to the slippery noodles as you slurp them up. Having already addressed an identical issue when finding a suitable replacement for ground beef in my vegan mapo tofu recipe, I knew what I had to do here: I chopped up a bunch of mushrooms in a food processor, then employed the Chinese technique of dry-frying—cooking them slowly in oil—until they were mostly dehydrated, lightly shriveled, and deeply browned. The resulting little nuggets have great texture and a flavor that is not really pork-like, but savory and rich in its own unique way.

"Ma po tofu is a lot of fun with a demi-sec wine from Alsace, like Sylvaner, or a bigger Pinot Gris. These wines have a mellow sweetness and bright acidity. For mushu pork, I think pairing with Riesling or a dry Tokay goes well; Furmint has a lot to offer to all the ingredients from this dish and we don’t play a lot with Hungarian wines, but there is a lot of great potential here. For the Pièce de résistance, peking duck? Well, you must break this down to white, red, or what the person in front of you likes better. If your dining companion likes white better, go with Loire Chenin Blanc. For red, I would go with Languedoc—a medium to bigger body, jam-plummy wine. Corbieres any one?"— Gerardo Acevedo-Vanni, Bocanova (Oakland CA)

Beets and citrus are a classic combination. This salad combines grapefruit, orange, roasted beets, and bit of arugula for some peppery kick. Nuts, in this case pine, go great with beets, and a vinaigrette made with sherry vinegar, shallots, walnut oil, and a touch of agave nectar sweetens the whole thing.

Our kung pao fish takes its cues from the intense Sichuan version of the stir-fry, not the mild American-style takeout dish. That means lots of mouth-numbing Sichuan peppercorns and funky doubanjiang, or chile-bean sauce, plus garlic, scallions, and peanuts. Go with a firm white fish, like catfish or tilapia for this recipe.

Fried-things-in-sandwiches has been a recurring theme throughout Vegan Month, and for good reason; they're delicious! Here is sandwich #3: tempura-battered oyster mushrooms with simmered daikon root. The two play off each other to make a crunchy, savory, chewy filling, and are perfectly complemented by a miso-agave mayonnaise .

The most famous ding in America is almost certainly kung pao chicken—you'll find it on pretty much any Chinese takeout menu in the country. Our version is made with bell peppers, celery, peanuts, and a mild sauce thickened with cornstarch. We use thigh meat for the diced chicken, which stands up to the heat of the wok better than white meat.

Good, homemade stock is the backbone to many a soup, and this one is no exception. With a ton of veggies and potatoes and a touch of cornstarch to give it body, this is a soup to get you through the rest of winter.

When the mercury rises, do you need to forgo spicy foods? Fortunately, the answer is "no.' Spicy foods can make you sweat , and your body cools as sweat evaporates from your skin. So if you're craving noodle food culture|https://noodleinsight.com/ with some heat when the thermometer reads 100°, go ahead and set your mouth on fire with one of these 15 dishes. They may bring the heat to your mouth, but they won't bring the heat to your kitchen—none of them require turning on the oven.

There are all kinds of variations on the dish that you'll find in Chinese restaurants in the U.S. Some go the ultra-authentic, hardcore traditional route, while others remove some or even all of the heat from the dish, instead replacing it with a creamy sesame (or even peanut butter!) based sauce. To me, picking one version of dan dan noodles as the best is kinda like choosing my favorite Beatles album: It's a constantly shifting debate, even with myself. Best plan is to just pick a path and run with it. This time I'm going for the more traditional approach. Obviously, modifying it for my vegan needs is going to alter that approach in practice (though not in spirit).
